Red Beans and Rice with Turkey sausage



*Red Beans, Turkey Sausage & Rice (for 6)*
 
1 lb. dried red beans, rinsed & drained
8 cups water
1 Ham hock
2 lbs. smoked turkey sausage cut into 1 inch pieces
3 tsp. minced garlic
2 onions chopped
1 cup celery chopped
 
1 Bay leaf


1 tsp. Worchester sauce

¼ tsp. Tabasco sauce

1 Tbs. parsley

1 ½ tsp. salt

3 cups cooked brown rice

 
*Combine beans, water and ham hock in a large sauce pan. Add sausage and cover.  Cook 1 hour & 30 minutes or until beans are soft. Add Worchester sauce and next three ingredients.  Simmer 5 minutes.  Remove bay leaf.  Serve over rice with Louisiana hot sauce and bread and butter pickles
